Spinach Tortellini en Brodo (in broth) is an Italian soup made with spinach and cheese tortellini and greens in a light-weight broth.

  • 2 tsp butter
  • 2 stalks of celery, chopped
  • 1 small onion, chopped
  • 1 carrot, peeled & chopped
  • 2 cloves of garlic, minced
  • 8 cups rooster broth
  • 3 cups water
  • 1 small Parmigiano Reggiano Rind, elective
  • 18 oz spinach cheese tortellini
  • half tsp contemporary floor pepper
  • half tsp floor nutmeg
  • 2 cups child spinach
  • salt to style
  • Parmigiano Reggiano, grated (elective)
  • In a big pot, soften the butter over medium-low warmth.

  • When melted, add the celery, onion, carrot & garlic.

  • Cowl and scale back warmth to low and cook dinner for roughly 8-10 minutes till greens start to melt.
